  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 potatoes, peeled and diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh basil leaves, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cook until onion is translucent.

  2. Add diced potatoes, diced tomatoes (with their juices), vegetable broth, dried basil, dried oregano, salt, and black pepper. Stir well.

  3. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, until the potatoes are tender.

  4. Use a potato masher or fork to lightly mash some of the potatoes in the pot, to create a chunky texture.

  5. Taste and adjust seasoning if needed.

  6. Serve the soup hot, garnished with fresh basil leaves.
