Ingredients

  • 1 lb cooked chicken, chopped
  • 1 cup frozen mixed vegetables
  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 unbaked 9-inch pie crust

Instructions

  1. Preheat oven to 425°F.

  2. In a large saucepan, sauté vegetables and onion in butter until tender.

  3. Stir in flour, salt, and pepper until blended. Gradually add broth and milk, stirring constantly.

  4. Bring to a boil; cook and stir for 2 minutes or until thickened.

  5. Stir in chicken; remove from heat.

  6. Pour mixture into pie crust.

  7. Cut slits in top of crust.

  8. Bake for 40 minutes or until crust is golden brown.
