Ingredients
- 1 lb (450g) sausage links
- 4 large potatoes, sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 cup (240ml) chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup (60ml) olive oil
- 1 cup (100g) grated cheddar cheese
Instructions

Preheat the oven to 375°F (190°C) and grease a casserole dish.

In a large skillet, cook the sausages until browned on all sides. Remove from the skillet and slice into bite-sized pieces.

In the same skillet, add the olive oil and sauté the onions, garlic, and bell pepper until softened.

Layer half of the sliced potatoes in the greased casserole dish. Top with half of the cooked sausages and half of the sautéed vegetables.

Sprinkle half of the dried thyme, dried rosemary, salt, and black pepper over the layer.

Repeat the layering process with the remaining potatoes, sausages, vegetables, and spices.

Pour the chicken broth over the casserole and cover with foil.

Bake in the preheated oven for 30 minutes, then remove the foil and sprinkle the grated cheddar cheese on top.

Bake for an additional 15 minutes or until the cheese is melted and bubbly.

Remove from the oven and let it cool slightly before serving.
