Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup of long grain white rice
  • 1 can of cream of chicken soup
  • 1 cup of chicken broth
  • 1/2 cup of sour cream
  • 1/2 cup of frozen peas
  • 1/2 cup of diced carrots
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a greased 9×13-inch baking dish, spread the uncooked rice evenly.

  3. Place the chicken breasts on top of the rice.

  4. In a medium bowl, mix together the cream of chicken soup, chicken broth, sour cream, peas, carrots, garlic powder, onion powder, salt, and pepper.

  5. Pour the mixture over the chicken and rice, ensuring that everything is evenly coated.

  6. Cover the baking dish with foil and bake for 45 minutes.

  7. Remove the foil and bake for an additional 15 minutes or until the chicken is cooked through and the rice is tender.

  8. Let the casserole rest for a few minutes before serving.
