Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can diced tomatoes, drained (14.5 oz)
  • 1 can corn, drained (14.5 oz)
  • 1 can black beans, rinsed and drained (15 oz)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F/175°C.

  2. In a large skillet, cook the ground beef, onion, red bell pepper, and garlic over medium heat until the beef is no longer pink.

  3. Add the chili powder, ground cumin, salt, and black pepper. Stir to combine.

  4. Add the diced tomatoes, corn, and black beans. Stir to combine.

  5. Transfer the beef mixture to a 9×13 inch baking dish. Top with shredded cheddar cheese.

  6. Bake for 20-25 minutes or until the cheese is melted and bubbly.
