Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup kalamata olives, chopped
  • 1/2 cup crumbled feta cheese
  • 1 tsp dried oregano
  • salt and pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, heat oil over medium-high heat. Add onion, garlic, and red bell pepper, and cook until softened.

  3. Add ground beef and cook until browned, breaking it up with a spoon.

  4. Add diced tomatoes, olives, oregano, salt, and pepper, and simmer for 5-10 minutes.

  5. Transfer the beef mixture to a casserole dish and sprinkle feta cheese on top.

  6. Bake in the oven for 20 minutes until heated through and cheese is golden brown.
