How To Make Ground Beef and Sweet Potato Casserole

A hearty dish that combines the sweetness of sweet potatoes and the richness of ground beef in one delicious casserole.

Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can diced tomatoes (14 oz)
  • 1 tsp salt
  • 1 tsp ground pepper
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 cup grated cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Peel and dice sweet potatoes into 1-inch chunks.

  3. In a large skillet, brown ground beef over medium-high heat.

  4. Add onion and garlic, and cook until onion becomes translucent.

  5. Add sweet potatoes, diced tomatoes (with juice), salt, pepper, paprika and oregano. Stir to combine.

  6. Transfer mixture to a baking dish and top with grated cheddar cheese.

  7. Cover with foil and bake for 30 minutes.

  8. Remove foil and bake for an additional 20 minutes, until sweet potatoes are fork-tender and cheese is melted and bubbly.

  9. Let cool for a few minutes before serving.
