Ingredients

  • 1 lb ground beef
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 can diced tomatoes
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.

  2. Brown ground beef in a skillet, then drain any excess fat.

  3. Add mixed vegetables, diced tomatoes, olive oil, garlic powder, onion powder, salt, and pepper to the skillet. Stir to combine.

  4. Pour the beef and vegetable mixture into a 9×13 inch casserole dish.

  5. Top with shredded cheddar cheese.

  6. Bake for 30-40 minutes, or until the cheese is melted and bubbly.
