How To Make Beef in Barolo

Ingredients

  • 2 lbs beef chuck roast
  • 1 bottle of Barolo wine
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh rosemary and thyme sprigs
  • 2 bay leaves

Instructions

  1. Season the beef with salt and pepper. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef on all sides, then remove and set aside.

  2. In the same pot, add the diced onion, minced garlic, carrots, and celery. Cook until vegetables soften.

  3. Add the tomato paste and cook for another minute, stirring constantly.

  4. Return the beef to the pot and pour in the Barolo wine and beef broth. Add the bay leaves and herb sprigs.

  5. Bring to a simmer, then cover and reduce heat to low. Cook for about 3 hours or until the beef is tender.

  6. Remove the beef and let it rest. Meanwhile, strain the cooking liquid and vegetables into a separate saucepan.

  7. Skim off any excess fat and bring the sauce to a simmer. Cook until it reduces and thickens.

  8. Slice the beef and serve with the reduced sauce.
