Preparation: 20 minutes
Cooking: 4 hours
Total: 4 hours and 20 minutes

Serves:

Ingredients

  • 1 1/2 pounds beef chuck roast
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups beef broth
  • 1 tablespoon vegetable oil
  • 8 small flour tortillas
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (such as cheddar or Mexican blend)
  • Optional toppings: sour cream, diced tomatoes, chopped cilantro

Instructions

  1. Season the beef roast with salt, pepper, chili powder, cumin, paprika, and oregano. Heat vegetable oil in a large skillet over medium-high heat. Brown the beef on all sides, then transfer to a slow cooker.

  2. In the same skillet, sauté the chopped onion and minced garlic until softened and fragrant. Add the onion and garlic mixture to the slow cooker with the beef.

  3. Pour beef broth over the beef and onion mixture in the slow cooker. Cover and cook on low heat for 6-8 hours or on high heat for 4 hours, until the beef is tender and easily shredded.

  4. Once the beef is cooked, preheat the oven to 350°F (175°C). Remove the beef from the slow cooker and shred it using two forks.

  5. Warm the flour tortillas in the microwave or in a dry skillet until pliable. Spoon a portion of the shredded beef onto each tortilla, roll it up, and place it seam-side down in a baking dish.

  6. Pour enchilada sauce over the rolled-up tortillas, spreading it evenly. Sprinkle shredded cheese over the top.

  7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

  8. Serve the shredded beef enchiladas hot, garnished with optional toppings like sour cream, diced tomatoes, and chopped cilantro.
