  • 2 lbs beef roast
  • 2 large onions, thinly sliced
  • 3 cloves of garlic, minced
  • 2 tbsp olive oil
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste


  1. Preheat the oven to 350°F (175°C).

  2. Season the beef roast with salt and pepper.

  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.

  4. Sear the beef roast on all sides until browned, about 5 minutes per side.

  5. Remove the beef roast from the skillet and set aside.

  6. In the same skillet, add the sliced onions and minced garlic.

  7. Cook, stirring occasionally, until the onions are caramelised and golden brown, about 10-15 minutes.

  8. Return the beef roast to the skillet with the onions and garlic.

  9. Pour in the beef broth, Worcestershire sauce, and balsamic vinegar.

  10. Cover the skillet with a lid or foil and transfer it to the preheated oven.

  11. Roast for about 1.5 to 2 hours, or until the beef is tender and cooked to your desired doneness.

  12. Remove the skillet from the oven and transfer the beef roast to a cutting board.

  13. Allow the beef to rest for 10-15 minutes before slicing.

  14. Meanwhile, pour the remaining onion and broth mixture from the skillet into a saucepan.

  15. Bring the mixture to a simmer over medium heat and cook until it thickens into a gravy consistency, about 5-10 minutes.

  16. Slice the roast beef and serve with the caramelised onion gravy.
