How To Make Roast Leg of Lamb with Basil & Mint Pesto

Ingredients
- 1 leg of lamb (about 4 pounds)
- Salt and pepper to taste
- 1 cup basil leaves
- 1/2 cup mint leaves
- 3 cloves of garlic
- 1/2 cup pine nuts
- 1/2 cup grated Parmesan cheese
- 1/2 cup olive oil
- Juice of 1 lemon
Instructions

Preheat the oven to 375°F (190°C).

In a food processor, combine the basil, mint, garlic, pine nuts, Parmesan cheese, olive oil, and lemon juice. Blend until smooth.

Spread the pesto mixture all over the leg of lamb, making sure to cover it completely.

Place the leg of lamb in a roasting pan and roast in the preheated oven for about 1 hour or until the internal temperature reaches 145°F (63°C) for medium-rare.

Remove the leg of lamb from the oven and let it rest for a few minutes before slicing.

Serve the roast leg of lamb with the remaining pesto sauce on the side.
