- 6chicken thighs,bone in and skin on
- ¼cupvegetable oil
- 3clovesgarlic,minced
- 3tbspold bay seasoning
- 1tspkosher salt
- ½tspcoarse ground black pepper
- 2lbsrusset potatoes,peeled and cut into 1-inch chunks
- 1½cupscorn
Instructions

Preheat oven to 375 degrees F.

Mix together all the ingredients in a large bowl.

Add the chicken, skin side up to the baking pan, and put the potatoes and corn around it in the pan. Make sure not to cover the chicken with the vegetables.

Roast for 45 to 55 minutes, until chicken is crispy and the internal temperature reaches 165 degrees F.
