Ingredients
- 2 cups flour
- ½ cup sugar
- 1 ½ tbsp baking powder
- 1 tsp salt
- 2 eggs, beaten
- 1 ½ cups skim milk
- ½ cup mashed potatoes, cold
- 2 cup cheddar cheese, shredded
- â…“ cup butter, melted
Instructions

Preheat oven to 400 degrees F.
- Combine flour, sugar, salt, and baking powder. Set Aside.
- Mix together eggs, milk, potatoes, butter, and 1 cup cheese.
- Add to dry ingredients.
- Fill muffin tins with the batter.
- Sprinkle on remaining cheese.
- Bake for 30 minutes.
