Creating these cheddar-flavored mashed potato muffins are such a treat. We've made sure to use shredded cheddar cheese and cold mashed potatoes for this recipe.

  • 2 cups flour
  • ½ cup sugar
  • 1 ½ tbsp baking powder
  • 1 tsp salt
  • 2 eggs, beaten
  • 1 ½ cups skim milk
  • ½ cup mashed potatoes, cold
  • 2 cup cheddar cheese, shredded
  • cup butter, melted


  1. Preheat oven to 400 degrees F.

  2. Combine flour, sugar, salt, and baking powder. Set Aside.
  3. Mix together eggs, milk, potatoes, butter, and 1 cup cheese.
  4. Add to dry ingredients.
  5. Fill muffin tins with the batter.
  6. Sprinkle on remaining cheese.
  7. Bake for 30 minutes.
