How To Make Garlic Roast Lamb with Hotpot Potatoes
Serves:
Ingredients
- 1.5 kg leg of lamb
- 6 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tbsp rosemary leaves, chopped
- Salt and pepper to taste
- 1.5 kg potatoes, peeled and thinly sliced
- 3 cups beef or vegetable stock
- 2 tbsp butter, melted
Instructions

Preheat the oven to 180°C (350°F).

Make small incisions all over the lamb and insert the minced garlic into the incisions.

Drizzle the olive oil over the lamb and rub in the chopped rosemary, salt, and pepper.

Place the lamb in a roasting pan and roast in the preheated oven for 1 hour 30 minutes, or until cooked to your desired level of doneness.

Meanwhile, place the sliced potatoes in a large pot and cover with the stock. Bring to a boil and simmer for 5 minutes until partially cooked.

Drain the potatoes and arrange them around the lamb in the roasting pan.

Brush the melted butter over the potatoes and season with salt and pepper.

Return the pan to the oven and roast for an additional 30 minutes, or until the potatoes are golden and crispy.

Remove the lamb from the oven and let it rest for 10 minutes before carving.
