Ingredients

  • 2 pounds chuck roast, cut into cubes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno pepper, seeded and diced
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup beef broth
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, chopped cilantro

Instructions

  1. In a large pot or Dutch oven, heat some oil over medium heat. Add the chuck roast and brown on all sides. Remove from the pot and set aside.

  2. In the same pot, add the diced onion, minced garlic, and diced jalapeno pepper. Cook until the onions are translucent and the garlic is fragrant.

  3. Add the chili powder, cumin, and smoked paprika. Stir to coat the onions and garlic with the spices.

  4. Return the browned chuck roast to the pot. Add the diced tomatoes, kidney beans, and beef broth. Season with salt and pepper to taste.

  5. Bring the chili to a boil, then reduce the heat to low. Cover and simmer for 2 hours, stirring occasionally, until the meat is tender and the flavors have melded together.

  6. Serve the chuck roast chili hot, garnished with sour cream, shredded cheese, and chopped cilantro if desired.
