Warm, comforting beef stew with tender meat, potatoes, and vegetables simmered in a flavorful broth with bay leaf.

Ingredients
- 1 lb beef stew meat, cut into bite-sized pieces
- 2 tbsp oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 2 cups water
- 4 bay leaves
- 4 carrots, peeled and chopped
- 4 potatoes, peeled and chopped
- Salt and pepper to taste
Instructions

In a large pot, heat oil over medium-high heat. Add beef and brown on all sides.

Add onions and garlic, stirring until softened.

Pour in beef broth and water, add bay leaves. Bring to a boil, then reduce heat and let simmer for 1 1/2 hours.

Add carrots and potatoes, and continue simmering for another 30 minutes or until vegetables are tender.

Season with salt and pepper.
