Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 courgettes, sliced
- 4 tomatoes, chopped
- 1 cup vegetable broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.

Add the courgettes to the pot and cook for 5 minutes, until slightly tender.

Add the tomatoes, vegetable broth, dried thyme, dried oregano, salt, and pepper to the pot. Stir well to combine.

Bring the stew to a simmer, then reduce the heat to low. Cover and let it cook for 20 minutes, stirring occasionally.

Serve the tomato and courgette stew hot with crusty bread or rice.
