How To Make Tomato & Courgette Stew

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 courgettes, sliced
  • 4 tomatoes, chopped
  • 1 cup vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.

  2. Add the courgettes to the pot and cook for 5 minutes, until slightly tender.

  3. Add the tomatoes, vegetable broth, dried thyme, dried oregano, salt, and pepper to the pot. Stir well to combine.

  4. Bring the stew to a simmer, then reduce the heat to low. Cover and let it cook for 20 minutes, stirring occasionally.

  5. Serve the tomato and courgette stew hot with crusty bread or rice.
