How To Make Cheesy Black Bean Quesadillas

Ingredients
- 8 flour tortillas
- 1 can black beans, drained and rinsed
- 2 cups shredded cheddar cheese
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1/4 cup chopped fresh cilantro
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Cooking spray
Instructions

Preheat a large skillet over medium heat.

In a bowl, mix together black beans, onions, bell peppers, cilantro, cumin, chili powder, salt, and pepper.

Spray the skillet with cooking spray and place a tortilla in the skillet.

Spread a layer of the black bean mixture over half of the tortilla.

Sprinkle shredded cheese over the black bean mixture.

Fold the tortilla in half, pressing down gently.

Cook for 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted.

Repeat with the remaining tortillas and filling.

Cut quesadillas into wedges and serve hot.
