Ingredients

  • 8 flour tortillas
  • 1 can black beans, drained and rinsed
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat a large skillet over medium heat.

  2. In a bowl, mix together black beans, onions, bell peppers, cilantro, cumin, chili powder, salt, and pepper.

  3. Spray the skillet with cooking spray and place a tortilla in the skillet.

  4. Spread a layer of the black bean mixture over half of the tortilla.

  5. Sprinkle shredded cheese over the black bean mixture.

  6. Fold the tortilla in half, pressing down gently.

  7. Cook for 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted.

  8. Repeat with the remaining tortillas and filling.

  9. Cut quesadillas into wedges and serve hot.
