How To Make Spinach & Courgette Lasagne

Ingredients
- 6 lasagne sheets
- 2 courgettes, thinly sliced
- 2 cups of spinach
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup of ricotta cheese
- 1 cup of grated mozzarella cheese
- 1 cup of grated Parmesan cheese
- 2 cups of tomato sauce
- 2 tablespoons of olive oil
- 1 teaspoon of dried basil
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

Heat olive oil in a pan and sauté onions until translucent. Add garlic and cook for another minute.

Add courgettes and cook until they start to soften. Then add spinach and cook until wilted. Season with salt, pepper, basil, and oregano.

In a separate bowl, mix ricotta cheese and half of the Parmesan cheese.

Grease a baking dish and spread a thin layer of tomato sauce at the bottom.

Place 2 lasagne sheets on top of the sauce. Add a layer of the courgette and spinach mixture, followed by a layer of ricotta cheese mixture.

Repeat the layers until ingredients are used, finishing with a layer of lasagne sheets on top.

Spread the remaining tomato sauce over the lasagne sheets and sprinkle with mozzarella cheese and the rest of the Parmesan cheese.

Cover with foil and bake for 30 minutes. Then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.

Let it cool for a few minutes before serving.
