How To Make Cod Puttanesca with Spinach & Spaghetti

Ingredients
- 8 ounces spaghetti
- 1 pound cod fillets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 can (14 ounces) diced tomatoes
- 1/4 cup pitted olives, sliced
- 2 tablespoons capers
- 2 cups fresh spinach
- Salt and pepper to taste
- Fresh basil, chopped (for garnish)
Instructions

Cook the spaghetti according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the cod fillets and cook for 4-5 minutes on each side until cooked through. Remove from skillet and set aside.

In the same skillet, add the minced garlic and red pepper flakes. Cook until fragrant, about 1 minute.

Add the diced tomatoes, olives, and capers to the skillet. Simmer for 5 minutes.

Stir in the fresh spinach and cook until wilted.

Return the cooked cod fillets to the skillet and cook for an additional 2-3 minutes to heat through.

Serve the cod puttanesca over the cooked spaghetti. Garnish with fresh basil.
