How To Make Fresh Tomato & Courgette Penne

Ingredients
- 300g penne pasta
- 4 large tomatoes, diced
- 2 courgettes, sliced
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions

Cook the penne pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.

Add the diced tomatoes and sliced courgettes to the skillet. Cook for about 5 minutes until the vegetables are slightly softened.

Season with salt and pepper to taste.

Add the cooked penne pasta to the skillet and toss until well combined.

Cook for an additional 2-3 minutes until the pasta is heated through.

Serve the Fresh Tomato & Courgette Penne hot, garnished with grated Parmesan cheese.
