How To Make Griddled Courgette & Seafood Lasagne

Ingredients

  • 2 courgettes, thinly sliced
  • 300g mixed seafood (such as prawns, squid, and mussels)
  • 250g lasagne sheets
  • 400g jar of tomato passata
  • 250g ricotta cheese
  • 100g grated Parmesan cheese
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a griddle pan over medium-high heat and lightly brush the courgette slices with olive oil. Griddle the courgette slices for about 1-2 minutes on each side until charred and tender. Set aside.

  2. In a separate pan, heat olive oil over medium heat and add minced garlic. Cook for 1-2 minutes until fragrant.

  3. Add the mixed seafood to the pan and cook for 3-4 minutes until cooked through. Season with salt and pepper.

  4. Preheat the oven to 180°C (350°F).

  5. In a baking dish, spread a layer of tomato passata on the bottom. Add a layer of lasagne sheets, followed by a layer of griddled courgette slices and cooked seafood. Repeat the layers until all ingredients are used, finishing with a layer of lasagne sheets.

  6. Dot spoonfuls of ricotta cheese over the lasagne and sprinkle grated Parmesan cheese on top.

  7. Bake in the preheated oven for 30-35 minutes until the lasagne sheets are cooked and the cheese is golden and bubbling.

  8. Remove from the oven and let it cool for a few minutes before serving.

  9. Serve the griddled courgette & seafood lasagne hot, garnished with fresh herbs if desired.
