How To Make Creamy Tomato, Courgette & Prawn Pasta

Ingredients
- 300g pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 onion, diced
- 2 courgettes, sliced
- 400g canned chopped tomatoes
- 200g prawns, peeled and deveined
- 200ml heavy cream
- Salt and pepper to taste
- Fresh basil leaves, for garnish
Instructions

Cook the pasta according to package instructions until al dente. Drain and set aside.

Heat the olive oil in a large pan over medium heat. Add the minced garlic and diced onion, and sauté until fragrant and softened.

Add the courgette slices to the pan and cook until they are slightly tender.

Stir in the canned chopped tomatoes and simmer for 5 minutes.

Add the prawns to the pan and cook until they turn pink and are cooked through.

Pour in the heavy cream and season with salt and pepper. Simmer for an additional 5 minutes until the sauce has thickened slightly.

Add the cooked pasta to the pan and toss until it is well coated with the creamy tomato and courgette sauce.

Serve the creamy tomato, courgette & prawn pasta hot, garnished with fresh basil leaves.
