How To Make Quick Chilli Bean Wraps

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup vegetable broth
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • Sour cream, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the onion, garlic, red bell pepper, and jalapeno pepper. Cook until the vegetables are softened, about 5 minutes.

  2. Stir in the cumin and chili powder. Cook for an additional 1 minute.

  3. Add the kidney beans, black beans, and vegetable broth. Season with salt and pepper. Simmer for 10 minutes, until heated through and flavors are well combined.

  4. Warm the tortillas in a dry skillet or microwave.

  5. Spoon the bean mixture onto each tortilla, then sprinkle with shredded cheddar cheese, diced tomatoes, and chopped cilantro. Roll up the tortillas, tucking the sides as you go.

  6. Serve the wraps with sour cream on the side.
