Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, roasted and diced
  • 1 green bell pepper, roasted and diced
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 2 tablespoons chilli powder
  • 1 tablespoon cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, diced avocado, sour cream, chopped cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until onions are translucent.

  2. Add roasted peppers, black beans, kidney beans, diced tomatoes, vegetable broth, chilli powder, cumin, salt, and pepper to the pot. Stir well to combine.

  3. Bring chilli to a boil, then reduce heat to low. Cover and simmer for 30 minutes, stirring occasionally.

  4. Remove lid and continue to simmer for an additional 10-15 minutes to allow the flavours to meld together.

  5. Serve hot with desired toppings.
