Ingredients
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can pinto beans, drained and rinsed
- 1 can chickpeas, drained and rinsed
- 1 can cannellini beans, drained and rinsed
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 jalapeno, seeded and minced
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions

In a large pot, heat some oil over medium heat. Add the diced onion, minced garlic, diced bell pepper, and minced jalapeno. Cook until the vegetables are softened, about 5 minutes.

Add the chili powder, cumin, paprika, salt, and pepper to the pot. Stir well to coat the vegetables with the spices.

Pour in the diced tomatoes, vegetable broth, and all five types of beans. Stir to combine everything together.

Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes, stirring occasionally.

Taste the chilli and adjust the seasonings if needed.

Serve the five-bean chilli hot, garnished with your preferred toppings.
