Ingredients

  • 1 lb beef, thinly sliced
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp chilli powder
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1 can black beans, rinsed
  • 1 cup beef broth
  • Salt and pepper, to taste
  • 2 avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp lime juice
  • Fresh cilantro, for garnish

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add the onion and garlic, and cook until translucent.

  2. Add the beef slices to the skillet and cook until browned on all sides.

  3. Stir in the chilli powder, cumin powder, and paprika. Cook for another 2 minutes.

  4. Add the black beans and beef broth to the skillet. Season with salt and pepper.

  5. Reduce the heat to low, cover the skillet, and simmer for 20 minutes.

  6. In a separate bowl, combine the diced avocados, cherry tomatoes, red onion, lime juice, salt, and pepper. Mix well to make the avocado salad.

  7. Serve the chilli beef with black beans over rice or tortilla chips. Top with the avocado salad and garnish with fresh cilantro.
