How To Make Lemon & Rosemary Halloumi Skewers

Ingredients

  • 1 block of halloumi cheese, cut into cubes
  • 1 lemon, zested and juiced
  • 2 sprigs of fresh rosemary, leaves picked
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. In a small bowl, whisk together the lemon zest and juice, rosemary leaves, olive oil, salt, and pepper.

  2. Thread the halloumi cubes onto skewers, alternating with lemon slices.

  3. Brush the halloumi skewers with the lemon and rosemary marinade, making sure to coat them well.

  4. Heat a grill or grill pan over medium heat. Cook the skewers for about 2-3 minutes on each side, until the halloumi is golden and slightly charred.

  5. Remove the skewers from the heat and serve hot.
