  • 2 courgettes, cut into chunks
  • 200g halloumi cheese, cut into cubes
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1 lemon, juiced
  • Salt and pepper, to taste

Instructions

  1. Preheat the grill or barbecue.

  2. In a bowl, combine the olive oil, minced garlic, lemon juice, salt, and pepper.

  3. Thread the courgette chunks and halloumi cheese cubes onto skewers, alternating between them.

  4. Brush the skewers with the olive oil mixture, ensuring they are well coated.

  5. Place the skewers on the grill or barbecue and cook for about 5 minutes on each side, or until the halloumi is golden brown and the courgette is tender.

  6. Remove from the heat and serve hot.
