How To Make Halloumi & Quinoa Fattoush

Serves:

Ingredients

  • 1 cup cooked quinoa
  • 8 oz halloumi cheese, sliced
  • 1 large cucumber, diced
  • 2 medium tomatoes, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh parsley leaves
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked quinoa, cucumber, tomatoes, red bell pepper, red onion, mint leaves, and parsley leaves.

  2. In a separate skillet, heat some olive oil over medium heat. Add the halloumi slices and cook until they turn golden brown on both sides, about 2-3 minutes per side.

  3. Add the cooked halloumi to the bowl with the quinoa and vegetable mixture.

  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss until everything is well coated.

  5. Serve the Halloumi & Quinoa Fattoush salad immediately.
