How To Make Halloumi & Quinoa Fattoush

Ingredients
- 1 cup cooked quinoa
- 8 oz halloumi cheese, sliced
- 1 large cucumber, diced
- 2 medium tomatoes, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh parsley leaves
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions

In a large bowl, combine the cooked quinoa, cucumber, tomatoes, red bell pepper, red onion, mint leaves, and parsley leaves.

In a separate skillet, heat some olive oil over medium heat. Add the halloumi slices and cook until they turn golden brown on both sides, about 2-3 minutes per side.

Add the cooked halloumi to the bowl with the quinoa and vegetable mixture.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss until everything is well coated.
