Ingredients

  • 1 block of halloumi cheese, cut into bite-sized cubes
  • 4 tablespoons of membrillo (quince paste)
  • 1 tablespoon of olive oil
  • 1 teaspoon of smoked paprika
  • Squeeze of lemon juice
  • Fresh mint leaves, for garnish

Instructions

  1. Preheat your grill or grill pan over medium-high heat.

  2. Thread the halloumi cubes onto skewers.

  3. In a small saucepan, heat the membrillo, olive oil, smoked paprika, and lemon juice over low heat until melted and blended together.

  4. Place the halloumi skewers on the grill and brush them generously with the membrillo glaze.

  5. Grill for about 2-3 minutes per side, until the cheese is slightly charred and caramelized.

  6. Remove the skewers from the grill and let them cool for a minute.

  7. Garnish with fresh mint leaves before serving.
