Ingredients

  • 2 cups of cooked jasmine rice
  • 250g prawns, peeled and deveined
  • 1 cup frozen peas
  • 2 garlic cloves, minced
  • 2 shallots, finely chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 2 spring onions, chopped for garnish
  • 4 lime wedges for serving

Instructions

  1. Heat vegetable oil in a wok or large skillet over medium heat. Add minced garlic and chopped shallots, stir-frying until fragrant.

  2. Add prawns and cook until they turn pink and opaque. Remove prawns from the pan and set aside.

  3. In the same pan, add cooked jasmine rice and stir-fry for a few minutes until heated through and well-coated with the garlic and shallot mixture.

  4. Push the rice to one side of the pan and crack two eggs onto the empty side. Scramble the eggs until almost fully cooked, then mix them with the rice.

  5. Add frozen peas, fish sauce, soy sauce, oyster sauce, sugar, and white pepper. Stir-fry for another 2-3 minutes until the peas are tender and everything is well combined.

  6. Return the cooked prawns to the pan and toss them with the rice mixture.

  7. Serve hot, garnished with chopped spring onions and a lime wedge on the side.
