Ingredients

  • 8 ounces of halloumi cheese, cut into cubes
  • 12 large mushrooms
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • 8 skewers

Instructions

  1. Preheat your grill or grill pan to medium-high heat.

  2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.

  3. Thread the halloumi cheese and mushrooms onto the skewers, alternating between cheese and mushrooms.

  4. Brush the skewers with the olive oil mixture, coating them evenly.

  5. Place the skewers on the preheated grill and cook for about 5 minutes per side or until the cheese is golden brown and the mushrooms are tender.

  6. Remove the skewers from the grill and serve hot.
