How To Make Cranberry & Lentil Bake

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Serves:

Ingredients

  • 1 cup of dried lentils, rinsed
  • 2 cups of vegetable broth
  • 1 cup of cranberries
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp of dried thyme
  • 1/2 tsp of salt
  • 1/4 tsp of black pepper
  • 1/4 cup of chopped parsley
  • 1/4 cup of grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large pot, combine the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.

  3. In a separate pan, sauté the onion and garlic until softened.

  4. Add the cranberries, thyme, salt, and black pepper to the pan and cook for an additional 5 minutes.

  5. Add the cooked lentils to the cranberry mixture and stir well to combine.

  6. Transfer the mixture to a baking dish and sprinkle with chopped parsley and Parmesan cheese.

  7. Bake in the preheated oven for 25 minutes, or until the top is golden and crispy.

  8. Serve hot and enjoy!
