How To Make Mini Prosciutto & Asparagus Frittatas

Ingredients
- 6 large eggs
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 slices of prosciutto, diced
- 6 asparagus spears, trimmed and chopped
- 1/2 cup shredded cheese (such as cheddar or Gruyere)
Instructions

Preheat the oven to 375°F (190°C). Grease a muffin tin with non-stick spray.

In a medium bowl, whisk together the eggs, milk, salt, and black pepper.

Divide the diced prosciutto and chopped asparagus evenly among the muffin cups.

Pour the egg mixture over the prosciutto and asparagus, filling each cup about 3/4 full.

Sprinkle shredded cheese on top of each frittata.

Bake for 18-20 minutes, or until the frittatas are set and golden brown on top.

Allow them to cool for a few minutes before removing from the muffin tin.

Serve warm or at room temperature.
