How To Make Salmon & Puy Lentil Salad with Olive Dressing

Ingredients
- 4 salmon fillets
- 1 cup of Puy lentils
- 1 red onion, thinly sliced
- 1 cup of cherry tomatoes, halved
- 1/4 cup of Kalamata olives, pitted and sliced
- 1/4 cup of feta cheese, crumbled
- 1/4 cup of fresh parsley, chopped
- 3 tablespoons of olive oil
- 2 tablespoons of lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions

Cook the Puy lentils according to package instructions. Drain and set aside.

Preheat the oven to 400°F (200°C). Season the salmon fillets with salt and pepper. Place them on a baking sheet and bake for 12-15 minutes, or until cooked through.

In a large bowl, combine the cooked lentils, red onion, cherry tomatoes, olives, feta cheese, and parsley.

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing.

Pour the dressing over the lentil mixture and toss until well coated.

Divide the lentil salad onto plates and top each portion with a salmon fillet.

Garnish with extra parsley, if desired.
