How To Make Speedy Goat’s Cheese & Lentil Filo Pie

Ingredients

  • 200g goat’s cheese, crumbled
  • 200g cooked lentils
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 6 sheets of filo pastry
  • 50g butter, melted
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.

  3. Add the cooked lentils and dried thyme to the pan. Stir well to combine and cook for an additional 2 minutes. Remove from heat and let cool slightly.

  4. In a separate bowl, mix the crumbled goat’s cheese with the cooled lentil mixture. Season with salt and pepper to taste.

  5. Lay one sheet of filo pastry on a clean surface and brush with melted butter. Top with another sheet of filo and repeat the process until you have 6 layers of filo.

  6. Spoon the goat’s cheese and lentil filling onto one end of the filo pastry, leaving a border around the edges. Fold in the sides and roll up the filo pastry into a log shape, making sure to seal the edges with melted butter.

  7. Place the filo pie onto a baking sheet lined with parchment paper. Brush the top with melted butter.

  8. Bake in the preheated oven for 30-35 minutes, or until the filo pastry is golden brown and crispy.

  9. Allow the pie to cool slightly before serving. Cut into slices and enjoy!
