Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1 cup mixed fresh berries (such as strawberries, blueberries, and raspberries)
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a mixing bowl, whisk together the flour, milk, eggs, sugar, and vanilla extract until smooth.

  3. Place a 12-cup muffin tin in the oven to preheat for 5 minutes.

  4. Carefully remove the hot muffin tin from the oven and evenly distribute the mixed berries among the cups.

  5. Pour the batter over the berries, filling each cup about 3/4 full.

  6. Bake for 20-25minutes, until the puddings are puffed up and golden brown.

  7. Remove from the oven and let cool for a few minutes.

  8. Dust with powdered sugar and serve warm.
