Ingredients
- 1 cup all-purpose flour
- 1 cup milk
- 2 large eggs
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1 cup mixed fresh berries (such as strawberries, blueberries, and raspberries)
- Powdered sugar, for dusting
Instructions

Preheat the oven to 425°F (220°C).

In a mixing bowl, whisk together the flour, milk, eggs, sugar, and vanilla extract until smooth.

Place a 12-cup muffin tin in the oven to preheat for 5 minutes.

Carefully remove the hot muffin tin from the oven and evenly distribute the mixed berries among the cups.

Pour the batter over the berries, filling each cup about 3/4 full.

Bake for 20-25minutes, until the puddings are puffed up and golden brown.

Remove from the oven and let cool for a few minutes.

Dust with powdered sugar and serve warm.
