How To Make Roast Chicken & Spiced Rice

A flavorful roasted chicken served with fragrant spiced rice.

Ingredients

  • 1 whole chicken (about 4 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cayenne pepper (optional)
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a small bowl, mix together paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper to make a spice rub.

  3. Rub the spice mixture all over the chicken, including under the skin.

  4. Heat olive oil in a large oven-safe skillet or roasting pan over medium-high heat. Place the chicken in the skillet and sear it on all sides until golden brown, about 5 minutes per side.

  5. Remove the chicken from the skillet and set aside.

  6. In the same skillet, add the rice, chicken broth, cumin, turmeric, cinnamon, and cayenne pepper. Bring to a boil.

  7. Place the seared chicken on top of the rice mixture.

  8. Cover the skillet with foil or a lid and transfer it to the preheated oven.

  9. Roast the chicken and rice for 1 hour, or until the internal temperature of the chicken reaches 165°F (74°C) and the rice is cooked and fluffy.

  10. Remove the skillet from the oven and let the chicken rest for 10 minutes before carving.

  11. Serve the roast chicken on a platter with the spiced rice. Garnish with fresh parsley.
