How To Make Roast Chicken & Spiced Rice
A flavorful roasted chicken served with fragrant spiced rice.

Ingredients
- 1 whole chicken (about 4 pounds)
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups long-grain white rice
- 4 cups chicken broth
- 1 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cayenne pepper (optional)
- Fresh parsley, for garnish
Instructions

Preheat oven to 375°F (190°C).

In a small bowl, mix together paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper to make a spice rub.

Rub the spice mixture all over the chicken, including under the skin.

Heat olive oil in a large oven-safe skillet or roasting pan over medium-high heat. Place the chicken in the skillet and sear it on all sides until golden brown, about 5 minutes per side.

Remove the chicken from the skillet and set aside.

In the same skillet, add the rice, chicken broth, cumin, turmeric, cinnamon, and cayenne pepper. Bring to a boil.

Place the seared chicken on top of the rice mixture.

Cover the skillet with foil or a lid and transfer it to the preheated oven.

Roast the chicken and rice for 1 hour, or until the internal temperature of the chicken reaches 165°F (74°C) and the rice is cooked and fluffy.

Remove the skillet from the oven and let the chicken rest for 10 minutes before carving.

Serve the roast chicken on a platter with the spiced rice. Garnish with fresh parsley.
