A mouthwatering combination of roasted vegetables and flavorful pasta perfect for vegan foodies.

Ingredients
- 1 medium eggplant, peeled and diced
- 2 bell peppers, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 3 garlic cloves, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- 12 oz pasta (gluten-free if required)
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- Vegan parmesan cheese (optional)
Instructions

Preheat oven to 400°F.

In a large bowl, mix eggplant, bell peppers, zucchini, red onion, garlic, olive oil, salt and pepper.

Roast veggies for 20-25 minutes, tossing occasionally, till golden brown.

Cook pasta according to package directions, then drain and transfer to serving bowl.

Add roasted veggies, cherry tomatoes, and basil to the bowl.

Mix well, serve with Vegan parmesan cheese if desired.
