Ingredients

  • 1 onion, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, chopped
  • 1 eggplant, diced
  • 3 garlic cloves, minced
  • 1/2 cup tomato sauce
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and cook until softened.

  3. Add peppers, zucchini, and eggplant, and cook for 5-7 minutes, until slightly soft.

  4. Add tomato sauce, dried basil, salt, and pepper. Stir well and cook for another 5 minutes.

  5. Transfer the mixture to an oven-safe dish and bake for 25-30 minutes, until vegetables are fully cooked.

  6. Serve hot.
