Ingredients

  • 4 medium zucchinis, spiralized
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, thinly sliced
  • 4 cloves of garlic, minced
  • 1 tbsp of grated ginger
  • 2 tbsp of soy sauce
  • 1 tbsp of sesame oil
  • 1 tbsp of rice vinegar
  • 1 tsp of maple syrup
  • 1/4 tsp of red pepper flakes
  • 2 tbsp of chopped scallions

Instructions

  1. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, maple syrup, and red pepper flakes. Set aside.

  2. Heat a large pan over medium-high heat. Add a splash of oil and sauté onion, garlic, and ginger for 2-3 minutes or until fragrant.

  3. Add bell peppers to the pan and stir-fry for 3-4 minutes or until they start to soften.

  4. Push veggies to one side of the pan and add zucchini noodles. Stir them around for 2-3 minutes or until they are just tender.

  5. Pour the sauce over the veggies and stir everything until well-coated and heated through.

  6. Divide stir-fry among 4 serving plates and sprinkle with chopped scallions.
