How To Make Vegan Lemon Asparagus Pasta Recipe

A deliciously fresh and zesty vegan pasta dish with tender asparagus and fragrant lemon flavors.

Ingredients

  • 8 oz. pasta
  • 1 lb. asparagus, trimmed and cut into 2″ pieces
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1/4 cup extra virgin olive oil
  • 1/4 cup nutritional yeast
  • Salt and pepper, to taste

Instructions

  1. Cook pasta according to package directions. Drain and reserve 1/4 cup pasta water.

  2. While the pasta cooks, heat olive oil in a pan over medium heat.

  3. Add minced garlic and cook for 1-2 minutes until fragrant.

  4. Add asparagus to the pan and sauté for 6-8 minutes, or until tender.

  5. Add cooked pasta, nutritional yeast, lemon juice, lemon zest, salt, pepper and reserved pasta water to the pan and toss to combine.

  6. Serve hot.
