How To Make Vegan Lemon Asparagus Pasta Recipe

Ingredients
- 8 oz. pasta
- 1 lb. asparagus, trimmed and cut into 2″ pieces
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1/4 cup extra virgin olive oil
- 1/4 cup nutritional yeast
- Salt and pepper, to taste
Instructions

Cook pasta according to package directions. Drain and reserve 1/4 cup pasta water.

While the pasta cooks, heat olive oil in a pan over medium heat.

Add asparagus to the pan and sauté for 6-8 minutes, or until tender.

Add cooked pasta, nutritional yeast, lemon juice, lemon zest, salt, pepper and reserved pasta water to the pan and toss to combine.

Serve hot.
