Ingredients

  • 12 oz pasta
  • 2 ripe avocados
  • 1 garlic clove, minced
  • ½ lemon, juiced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • ¼ cup fresh parsley, chopped

Instructions

  1. Cook pasta according to package instructions.

  2. While pasta is cooking, prepare the avocado sauce. In a food processor, blend together avocados, garlic, lemon juice, olive oil, salt, and pepper until smooth.

  3. Drain cooked pasta and return it to the pot. Pour in the avocado sauce and stir until pasta is coated.

  4. Serve with fresh parsley on top.
