How To Make Vegan Keto Almond Flour Pancakes Recipe
Fluffy and delicious pancakes that are both vegan and keto-friendly.

Ingredients
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup almond milk
- 2 tbsp apple cider vinegar
- 2 tbsp coconut oil, melted
- 2 tbsp maple syrup
- 2 flax eggs (2 tbsp ground flaxseed mixed with 6 tbsp water)
- 1 tsp vanilla extract
Instructions

In a large bowl, whisk together almond flour, coconut flour, baking powder, cinnamon, and salt.

In a separate bowl, mix almond milk and apple cider vinegar. Let sit for 5 minutes to curdle.

Add melted coconut oil, maple syrup, flax eggs, and vanilla extract to the almond milk mixture. Whisk to combine.

Pour wet ingredients into dry ingredients and mix until well combined.

Heat a non-stick pan or griddle over medium heat. Once hot, scoop 1/4 cup of pancake batter into the pan for each pancake.

Cook for 2-3 minutes until bubbles form on the surface of the pancake. Flip and cook for an additional 1-2 minutes until golden brown.

Serve pancakes hot with maple syrup, fresh fruit, or any other desired toppings.
