Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup melted coconut oil
  • 1 egg
  • 2 tbsp unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat oven to 350°F.

  2. In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt.

  3. Add in melted coconut oil, egg, almond milk, and vanilla extract. Mix until a dough forms.

  4. Roll the dough into a log and cut into 8 equal pieces.

  5. In a small bowl, mix together the cinnamon and additional erythritol.

  6. Roll each piece of dough in the cinnamon mixture.

  7. Place the cookies on a baking sheet lined with parchment paper.

  8. Bake for 12-15 minutes or until golden brown.
