How To Make Vegan Air Fryer Veggie Spring Rolls Recipe

Ingredients
- 1 tbsp olive oil
- 2 cups shredded cabbage
- ½ cup shredded carrots
- ½ cup sliced mushrooms
- 1 tsp minced garlic
- 1 tsp minced ginger
- Salt and pepper to taste
- 8 spring roll wrappers
Instructions

Preheat air fryer to 390°F.

In a large bowl, mix together cabbage, carrots, mushrooms, garlic, ginger, salt, and pepper.

Lay a spring roll wrapper on a clean surface, spoon 1-2 tbsp of the vegetable filling on the bottom corner of the wrapper.

Roll the wrapper tightly around the filling, folding the sides towards the center halfway through rolling.

Brush the finished spring rolls with olive oil and place them in the air fryer basket, making sure they are not touching.

Air fry for 8-10 minutes or until the spring rolls are crispy and golden brown.
