A vibrant and refreshing Thai salad with minced chicken, packed with flavors of lime, chili, and herbs.

Ingredients
- 500g minced chicken
- 2 tablespoons fish sauce
- 3 tablespoons lime juice
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 2 Thai red chilies, finely chopped
- 1 shallot, thinly sliced
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 1/4 cup chopped Thai basil leaves
- 1 cucumber, thinly sliced
- 1/2 red onion, thinly sliced
- 1/4 cup chopped roasted peanuts
Instructions

In a bowl, mix together fish sauce, lime juice, soy sauce, and brown sugar until the sugar dissolves.

Heat a frying pan over medium heat and cook the minced chicken until it is cooked through.

Transfer the cooked chicken to a large mixing bowl and let it cool slightly.

Add the sliced shallots, chopped chili, cucumber, red onion, cilantro, mint leaves, basil leaves, and roasted peanuts to the bowl with the chicken.

Pour the dressing over the salad and toss well to combine.
