How To Make Spinach Mac ‘n’ Cheese

Ingredients
- 8 oz elbow macaroni
- 2 cups fresh spinach, chopped
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- Salt and pepper, to taste
Instructions

Cook the macaroni according to package instructions. Drain and set aside.

In a large pot, melt the butter over medium heat. Stir in the flour to make a roux.

Gradually whisk in the milk until smooth. Cook, stirring constantly, until the mixture thickens.

Remove from heat and stir in the cheese until melted and smooth.

Stir in the chopped spinach and cooked macaroni. Season with salt and pepper.

Transfer the mixture to a baking dish and bake at 350°F (175°C) for 20 minutes, or until bubbly and golden on top.
